The successful candidate will be responsible for leading the development and production of a new sushi line, training staff, maintaining quality standards, and supporting general kitchen operations.

SUSHI CHEF

 Location: Port-of-Spain

QUALIFICATIONS & REQUIRED SKILLS:

  • Extensive professional experience preparing sushi (e.g., nigiri, maki, sashimi)
  • Strong culinary background with knowledge of general kitchen operations
  • Experience developing recipes and establishing food preparation processes
  • Ability to train, mentor, and supervise kitchen staff
  • Strong understanding of food safety, hygiene, and quality standards
  • Ability to work in a fast-paced and evolving production environment
  • Strong communication and teamwork skills
  • Problem-solving ability and attention to detail
  • Entrepreneurial mindset and adaptability
  • Flexible to work shift-based hours, including early mornings or evenings
  • Flexible to work five (5) days per week (weekends included), on a rotating schedule

RESPONSIBILITIES & DUTIES

  • Lead the development and production of a new sushi product line
  • Refine recipes, portion sizes, and production workflows for sushi items
  • Train kitchen staff to ensure consistency and proper food handling practices
  • Maintain high standards of food quality, safety, and presentation
  • Provide support across other kitchen areas including hot, cold, and prep stations
  • Assist with catering or additional culinary operations as required
  • Monitor production processes and recommend improvements
  • Support the establishment of operational standards during the pilot phase
