Senior Executive Sous Chef

Job Summary:

The Senior Executive Sous Chef is responsible for supervising daily kitchen operations, ensuring all culinary production meets the resort’s luxury standards. This role includes training and leading kitchen staff, managing inventory and cost controls, overseeing banquets and à la carte services, and maintaining the highest food hygiene standards.

Key Responsibilities:

Supervise and coordinate kitchen operations to ensure timely, high-quality food service.

Conduct daily and weekly planning meetings with culinary teams.

Lead menu execution, including banquets, buffets, and specialty dining.

Oversee raw material management, inventory, and requisitions.

Monitor food quality, recipe adherence, and hygienic preparation standards.

Ensure compliance with HACCP / Cristal standards and Blue Diamond Resorts policies.

Support Executive Chef with administrative tasks, cost control, and production reports.

Train, motivate, and mentor kitchen staff to maintain excellence in service and efficiency.

Participate in briefings, management meetings, and operational planning.

Requirements:

Bachelor’s degree in Gastronomy or related field.

Minimum 5 years in a senior culinary management role, preferably in luxury all-inclusive resorts.

Expertise in international cuisine and banqueting operations.

Strong leadership, organizational, and team management skills.

Advanced knowledge of food safety, hygiene, and Cristal standards.

Proficient in cost control, recipe standardization, and kitchen equipment management.

Fluent in English; Spanish is an asset.

Flexible to work evenings, weekends, and holidays.
