Are you a Chef de Cuisine with the skills, vision and disciplinar to lead a dynamic kitchen? Rockhouse Hotel in Negril is building something special - and we want you to be part of it. We're seeking an experienced, creative culinary leader to support and help shape the future of one of our dining outlets, the Rockhouse Restaurant. Reporting to our Culinary Directors & Executive Chef, you'll oversee kitchen operations, mentor a growing team, and help evolve our menus into something unforgettable. Key Responsibilities
- Oversee all daily kitchen operations and food preparation
- Maintain strict adherence to food safety, sanitation & health regulations
- Manage kitchen inventory, ordering & cost control
- Implement & enforce standardized recipes, plating standards & quality protocols
- Collaborate with the Culinary Directors on menu planning, the development of new dishes and menu evolution that align with the Rockhouse vision
- Supervise, train & mentor kitchen staff (line cooks, prep cooks, stewards)
- Coordinate with suppliers/vendors & purchasing department for ingredient procurement
- Complete reports using email, Microsoft Word/Excel, Google Docs
- Effectively communicate with all levels of staffing (Directors, Managers & Line Staff) on the changes or updates within the kitchen
The successful candidate will need:
- Minimum 5 years experience managing a dynamic kitchen team
- Standard employment requirements such as National Insurance (NIS), Tax Registration Number (TRN), Scotia Bank Account, Birth Certificate, Police Record, Food Handler's Permit, HACCP Certificate or other relevant Certifications
- Strong team work and customer service skills
- Availability & flexibility to work shifts, weekends and public holidays
- Good health & fitness to work long hours, occassional heavy lifting and overtime when needed
