The Role
Reporting to the Food & Beverage Director, the Bar Manager will be responsible for the strategic and operational leadership of all bars across both the family-friendly Ocean Coral Spring and adults-only Eden Bay properties. This role requires a holistic view of the operation to ensure quality and brand standards are consistent across the resorts.
Key Functions and Responsibilities
- Operational Excellence: Oversee the daily operations of all beverage outlets, ensuring seamless service delivery for up to 2,200 guests at full occupancy across more than 21 bars.
- Financial Management & Cost Control: Implement and monitor strategies to manage beverage costs effectively, including evaluating allotments, minimizing spillage and theft, and optimizing procurement strategies (e.g., bulk orders).
- Revenue Generation: Develop and execute creative upselling programs and promotions for premium wines, spirits, and cocktails to drive revenue and enhance the guest experience.
- Quality & Standards: Ensure all operations consistently meet and maintain the highest levels of service, including strict adherence to AAA standards.
- Team Leadership & Development: Lead, supervise, and train a large team of bar staff. Training responsibilities include technical skills, crowd control, food safety, handling garnishes and high allergens, and managing specialized dietary requests (e.g., gluten-free options).
- Compliance: Maintain meticulous control over inventory, labor cost management (adjusting schedules based on occupancy), and adherence to all health and safety regulations.
Requirements & Qualifications- Proven experience in a senior bar management or Food & Beverage leadership role, ideally within a high-volume, all-inclusive resort environment.
- Exceptional financial acumen with a strong track record of successful beverage cost management and inventory control.
- Demonstrated ability to be a firm, situational, and hands-on leader who can hold staff accountable and implement effective corrective action and retraining protocols.
- Deep understanding of AAA standards and commitment to delivering exceptional guest satisfaction.
- Strong organizational and communication skills, with experience managing administrative duties and departmental coordination.
