The Terra Nova All Suite Hotel seeks to fill the position of Sous Chef.

 

Are you warm, authentic, enthusiastic, service oriented, and have a great attitude? We are looking for you!  The Terra Nova All-Suite Hotel located in Kingston, Jamaica, is seeking to fill the following role:

SOUS CHEF

ESSENTIAL DUITES

 Competently lead and motivate the culinary team and maintain consistency of food.

  1. Enforce the following of HACCP guidelines to prevent the growth of bacteria.
  2. Dialogue with Executive Chef to create and standardize menu.
  3. Partner with Executive Chef to established food quality standards during storage, preparation and service.
  4. Train and motivate staff on how to competently execute daily kitchen operations and ensure proper production of all menu items.
  5. Monitor and ensure proper opening and closing procedures for all kitchen and preparation areas and ensure that meals are prepared and served in a timely manner.
  6. Enforce first in first out method of goods rotation.
  7. Attend meetings, training sessions, courses and all other work-related activities as required.
  8. Derive ways to maximize profit and minimize lost.
  9. Work closely with the Executive Chef to maintain food cost.
  10. Responsible for the Kitchen when the executive chef is not present.
  11. Perform other duties based on your job and consistent with the objectives of the department assigned by your supervisors.

 MINIMUM QUALIFICATION AND EXPERIENCE

  • Certificate in Culinary Arts either from a recognized institution or H.E.A.R.T Trust NSTA - National Vocational Qualification of Jamaica (NVQ -J Level  2) OR
  • One (1) year working experience in a similar capacity

REQUIRED COMPETENCIES

  • Excellent knowledge of culinary arts and food preparation
  • Good knowledge inventory management and cost controls  
  • Good knowledge of supervising team members  
  • Knowledge of basic cooking techniques
  • Knowledge of health and safety rules in kitchen  
  • Good time management and organizing skills   
  • Good communications skills 
  • Ability to work efficiently under pressure
  • Ability to work in a team
