Position Summary

The Distillery Operator 2 role is responsible for monitoring and controlling various parameters in the manufacturing process of the Distillery on the Pot Still or Column, ensuring that the different marques being produced from the distillation process achieve the agreed targets in terms of quality and volumes.

Key Activities & Responsibilities

The incumbent will be performing the following activities:

  • Conduct pre-shift and post-shift inspections to ensure that all controls within the areas specified are working accurately
  • Ensure that all settings are properly made according to Standard Operating Procedure (SOP) on the column electronic system
  • Ensure that the necessary valves are set in the correct position on both Pots and Columns in accordance with the SOP and make necessary adjustments to ensure product being distilled is conforming to standard
  • Operate distillation equipment in accordance with SOP to intake, process and distill required marques for receival in the rum stores
  • Ensure the accurate and timely filling of all Pots to ensure production cycles are rotated efficiently
  • Pull and submit samples for in-process quality checks on distillate to verify product strength and GC profile
  • Monitor strength of distillate during Pot Still production and transfer to the designated receivers as necessary
  • Monitor and record critical parameters during column still production. This includes Steam Flow, Surge Flow, Wash Flow, Temperatures, and other relevant settings for maintenance of the Column equilibrium
  • Make the necessary adjustments to steam and other utilities required to maintain standard production on the Pot Still or column to achieve the expected results
  • Update the production tracking sheet for column and Pots to record all quality checks, time of checks and all actions taken during the production process
  • Update all cleaning records for distillation unit (Pot, Column or Auxiliary equipment) on a timely basis
  • Execute verification checks on all equipment after maintenance activity, including cleaning of the Pot or Column. This means checking all instruments, pumps/motors, man doors, calandrias and pre-heaters
  • Ensure production information is properly handed over to incoming Distillery Operator. Prepare daily reports and submit in a timely manner
  • Assist in all Root Cause Analysis activities being executed for Column or Pot Still operations
  • Ensure proper housekeeping of workstation in keeping with department’s 5’S program
  • Ensure that all Quality, Health, Food Safety, Safety and Environment regulations, policies and procedures are always adhered to

Required Education, Skills and Competencies

  • A minimum of five (5) CSEC subjects including: Mathematics, English Language and Chemistry
  • At least two (2) years’ working experience operating a Distillation Column or Pot Still
  • Good communication skills, both oral and written
  • Good interpersonal, team working skills
  • Good time management skills
  • Proactiveness, good judgement and good analytical skills
  • Ability to concentrate and focus on details
  • Must be competent in proper product sampling techniques
  • Ability to work on own initiative and cope well under pressure
  • Basic knowledge of Root Cause Analysis (RCA) or problem-solving techniques
  • Must be competent in distillation practices
  • Must be familiar with DMA Operations
  • Knowledge of general plant health and safety procedures and policies
  • Working knowledge of computer applications, including word processing and spreadsheet
Working Conditions
  • May be exposed to heat, noise, dust, dirt, odors, and debris and walk on potentially slippery surfaces
  • May be required to handle potentially hazardous chemicals
  • May be required to work in awkward positions (or at heights) from time to time
  • Required to work outside of normal working hours; on shift, including on weekends
  • Required to work in an environment which requires the ongoing use of Personal Protective Equipment (PPE) as required for the position and in accordance with Company policy.
