At Royalton Hotels & Resorts, we are looking for a Director of Food & Beverage to lead and oversee all F&B operations across our property in Antigua, with a regional scope that includes supporting teams in Granada, Saint Lucia, and Barbados. This role combines culinary creativity with strong business management skills to ensure exceptional dining experiences, operational profitability, and adherence to the highest standards of quality, hygiene, and service.

Main Responsibilities:

  • Design innovative menus and oversee their execution.
  • Control food and beverage costs, managing budgets and profit margins.
  • Supervise culinary production and ensure compliance with food safety and hygiene regulations.
  • Coordinate with service teams to deliver a seamless and exceptional guest experience.
  • Develop and implement strategies to increase revenue across all dining outlets (NPI).
  • Hire, train, and evaluate kitchen and F&B personnel.
  • Oversee inventory control, purchasing, and supplier relationships.
  • Manage special events, banquets, and VIP visits.
  • Ensure compliance with local health, hygiene, and safety regulations.
  • Report to the hotel’s General Manager and the Corporate Director of F&B on departmental performance and propose improvements.

Requirements:

  • Degree in Culinary Arts, Hospitality Management, or related field.
  • Minimum of 5 years’ experience in similar leadership roles.
  • Strong knowledge in cost control, inventory management, and team leadership.
  • Excellent culinary skills with a refined sense for food presentation.
  • Proven leadership, decision-making, and conflict-resolution abilities.
  • Advanced knowledge of food safety and hygiene practices.
  • Proficiency in management tools (Excel, POS systems, ERP software, etc.).
  • Fluency in English and Spanish (spoken and written).
