JOB SUMMARY

To proficiently prepare all meals and snacks to order, in compliance with required kitchen standards, AAA 5 Diamond and LQA Benchmarking standards and maintaining HACCP regulations.

 

RESPONSIBILITIES

  • Maintain a clean and organized kitchen.
  • Adhere to the established safety standards and also assist in the prevention of accidents by being aware of hazardous situations.
  • Assist in inventory counts and controls.
  • Receive and check food items from requisition orders.
  • Practice proper recycling procedures and kitchen energy management.
  • Must be familiar with all equipment and machinery including safe operation and maintenance.
  • To ensure that all meals, and snacks are correctly prepared, cooked and served to the HACCP regulations, the AAA 5 Diamond standards and LQA Benchmarking standards.
  • To assist with the cleaning of fridges.
  • To make sure all items placed in fridges/freezers are labeled and stored correctly.
  • To ensure quality and consistency with all completed food items.
  • Conduct daily checks on the quality and freshness of products.
  • To assist in the preparation of food to the AAA 5 Diamond standards and LQA Benchmarking standards for guest consumption.
  • All food is served at proper temperature in accordance with the company’s standards, AAA 5 Diamond standards and LQA Benchmarking standards.

 

 REQUIREMENTS

  • Secondary level education is required.
  • Graduated from a culinary institution.
  • 3-5 years of Chef experience in a AAA 5 Diamond Hotel/Restaurant or a similar upscale or reputable high end Fine Dining establishment.
  • Level 2 or above National Vocational Qualification in Food Preparation and Cookery.
  • Client Service Orientation.
  • Must be familiar with all kitchen equipment and machinery.
  • The ability to perform mathematical calculation including but not limited to conversion of recipes, inventories etc.
  • Must be in good physical condition to stand for 8 consecutive hours, walk, kneel and bend.
  • Must be able to sustain the heat and cold of the kitchen.
  • Knowledge of kitchen terminology required.
  • Knowledge of all other kitchen departments.
