Role Overview:

The Chef de Cuisine is responsible for overseeing the daily operations of the kitchen, ensuring that all food is prepared to the highest standards of quality, presentation, and efficiency. This role involves leading and developing the culinary team, managing kitchen operations, controlling costs, and maintaining health, safety, and sanitation standards. The Chef de Cuisine works closely with the Executive Sous Chef to design menus, implement seasonal offerings, and ensure consistent, high-quality dining experience. 

 

Main Key Responsibilities:

  • Oversee daily kitchen operations, ensuring smooth service during all meal periods. 
  • Supervise, train, and motivate culinary staff to maintain high standards of performance and teamwork. 
  • Conduct regular line checks and tastings to ensure standards are met.
  • Ensure consistent food quality, taste, and presentation in accordance with company standards.
  • Ensure recipes are accurately documented and consistently executed. 
  • Monitor and control food & labour costs to achieve departmental budget goals.
  • Oversee ordering, receiving, and storage of ingredients and supplies.
  • Conduct regular inventory counts and ensure accurate records are maintained.
  • Provide ongoing coaching, feedback, and training to develop team skills and morale. 
  • Participate in recruitment. onboarding, and performance evaluations.
  • Address and resolve any food-related guest concerns promptly and professionally. 

 

Required Skills & Qualifications:

  • Minimum 10 years of culinary experience, including 3-5 years in a senior leadership role within a luxury resort or hotel.
  • In-depth knowledge of Caribbean, Mediterranean, and international cuisines. 
  • Expertise in modern culinary techniques: Sous Vide, Emulsification, Specification, and Molecular Garnishing.
  • Excellent sense of taste and smell, with a passion for culinary artistry.
  • Excellent command of recipe standardization, portion control, yield calculation, and cost management. 
  • Certification in HACCP/Food Safety Management is an asset. 
  • Excellent knowledge of recipe standardisation and portion control systems.
  • Physically able to stand for long periods and perform physical tasks including lifting (50+ lbs), stretching, pushing, and bending.
