Assistant Director of Food & Beverage – Restaurants Focus
Position Summary
The Assistant Director of Food & Beverage (Restaurants Focus) supports the Director of F&B in leading, planning, and managing daily operations for restaurant bars, banquets, and in-room dining. This role ensures SLH Standard service delivery, drives guest satisfaction, and supports F&B leadership in developing teams, elevating service culture, and achieving commercial goals.
Key Responsibilities
Provide day-to-day leadership of all restaurant outlets, ensuring seamless, consistent, and exceptional guest service.
Support the Director of F&B in operational planning, budgeting, forecasting and control labor and expenses as guided by approved budget.
Implement and uphold SLH and Property standards across all restaurant operations.
Lead, coach, train, and mentor restaurant management teams and line staff with a strong focus on service excellence.
Oversee daily service execution, including pre-shift briefings, reservations management, table touches, menu knowledge, and service flow.
Collaborate closely with the Executive Chef to review menu updates, specials, and out-of-stock items.
Review restaurant conditions and equipment; coordinate maintenance and follow-up on corrective actions.
Review and approve daily reports, logbooks, POS data, and revenue summaries.
Support recruitment, onboarding, training, and performance management for restaurant employees.
Monitor guest feedback and resolve service challenges promptly and professionally.
Drive upselling programs, beverage strategies, and revenue‑generating initiatives.
Ensure compliance with all safety, hygiene, alcohol service, and food handling requirements.
Job Requirements
Bachelor’s degree in hospitality management or equivalent vocational training.
Minimum of 5 years’ experience in luxury F&B operations with at least 4-5 years in leadership roles.
Previous experience in SLH, Forbes 5‑Star, LQA rated properties preferred.
Valid food handler’s permit and alcohol awareness certification.
Skills
Strong Leadership skills along with proficiency in point of sale (POS0 Systems and Microsoft Office (Excel, Outlook)
Knowledge of principles and processes for providing customer and personal services. This includes customer needs assessment, meeting quality standards for services, and evaluation of customer satisfaction.
Determining how money will be spent to get the work done, and accounting for these expenditures.
Knowledge of business and management principles involved in strategic planning, resource allocation, human resources modeling, leadership technique, production methods, and coordination of people and resources.
Understanding market dynamics, enterprise level objectives, and important aspects of the company’s business to accurately diagnose strengths and weaknesses, anticipate opportunities and risks, identify issues, and develop strategies and plans. Aligning individual and team actions with strategies and plans to drive business results.
