Senior Sous Chef

Reporting to the Head Chef, the Senior Sous Chef is responsible for the supervision and training of the Kitchen team in our newly redesigned and elegantly refurbished resort, which re-opens on 22^nd September, 2013. 

The resort has enjoyed an excellent reputation for creating gourmet meals.  The successful applicant will be familiar with current culinary trends, have a passion for cooking and will work alongside the team to ensure we continue to receive rave reviews, while raising the standard of products served to our savvy and discerning global travellers.

Minimum qualifications, previous experience and skills required:

• At least 5 years experience as Sous Chef and 2 years as Senior Sous Chef in Five Star resorts or fine dining restaurants.

• Excellent culinary skills gained from formal instruction at a reputable institution, as well as through a structured career path.

• Evidence of developing manuals to guide the Kitchen brigade, maintaining adequate stock levels and controlling costs while not compromising quality and creativity.

• Proven track record of successfully improving the skills of Direct Reports to produce meals of an excellent standard.  

• Evidence of work which demonstrates attention to detail and creativity.

• Evidence of creating a positive and productive working environment. 

• Experience in AAA Five Diamond resorts or restaurants would be a definite advantage.

• Experience in the Pastry section would be a definite advantage.

• Computer literacy in Microsoft Office.

The successful candidate would be responsible for maintaining high levels of health, hygiene and safety practices, and assisting with administrative duties.
