Main Duties and Responsibilities:

• Provides direction, support and communication to all Directors and Managers to ensure complete guest satisfaction and attention to details. Delegates responsibilities to direct reports and tracks their progress
• Meets regularly with other F&B VP's, Directors and Managers to ensure compliance to service standards, policies and procedures. Evaluates performance of Directors and Managers and take corrective measures through training, mentoring and coaching to ensure the success of both the Management Team and the Operation
• Establish the goals and direction for a large Division and develop action plans to achieve those goals. Ensure that the end result is in line with the greater goals of the entire property and the company. Once all goals are achieved the end result must be that the Division is run successfully while at the same time enabling each member of the team to be successful and to grow their careers
• Continually re-evaluate all operating procedures to ensure that the operating standards and service levels reflect the most current standards and are on par with worldwide industry benchmark levels. Develops training programs and continually re-trains and educates all staff in the changes of these standards. Shares all customer feedback, internal and external , and uses this to regularly evaluate all service standards, policies and procedures
• Communicate all relevant customer feedback to entire staff to sensitize staff to the impact of the service delivery process on guests who utilize the F&B operations, encouraging all Directors and Managers to effect changes in service sequence, service delivery and service standards to maximize positive service levels
• Analyzes all financial reports so as to maximize fiscal performance of the F&B Division. Formulates and implements labor standards that when maintained ensure optimum guest satisfaction for all customers while meeting all established service standards.
• • Develops and updates all systems and processes related to purchasing, ordering, menu design, scheduling, beverage control, inventory management, productivity etc. to maximize financial return while providing service levels that exceed guest expectations
• Drawing on a deep industry experience, particularly in the US Market, ensure that the restaurant and bar concepts at Atlantis remain fresh, cutting edge and innovative. Evaluate thoroughly all existing operations then prepare and present ideas and concepts to redesign and re-launch operations so that they will have the desired result of improving profits for the Division, while positively impacting all guest satisfaction matrices.
• Work closely with all VP's to ensure that the Division cultivates great harmony and high morale across all Departments.
• Strive for 100% compliance by all F&B staff, as it relates to all corporate mandated programs (Swiping, EES, Performance Appraisals, Health Certificates etc. ) as well as attendance and active participation in all Atlantis University Training Modules.

Required Qualifications:

• Minimum of ten (10) years practical experience in a senior or executive role in a high volume, broad scoped Casino or Resort
• Proven history of successfully operating multiple businesses including Convention and Banquet, Premium and Casual Dining, Buffet Dining and Beverage Operations
• Highly Developed strategic and analytical capabilities
• Strong interpersonal and organizational skills
• Ability to work in a dynamic and intense environment
• Experience in working in a Union environment and will display an excellent ability to negotiate and collaborate effectively
• A proven track record of strong leadership skills, sound business judgment and flexibility
• Strong financial acumen with a high propensity for successfully driving revenues and building teams
