Oversee all aspects of the daily operation of beverage operations and outlets.
Supervise outlet personnel.
Respond to guest complaints in a timely manner.
Work with other F&B managers and keep them informed of issues as they arise.
Prepare and submit required reports in a timely manner.
Ensure preparation of required reports, including (but not limited to) Wage Progress, payroll, revenue, employee Schedules, quarterly actions plans.
Monitor quality of service in beverage outlets.
Ensure compliance with all local liquor laws, and health and sanitation regulations.
Ensure compliance with SOP’s in all outlets.
Ensure compliance with requisition procedures.
Be visible on the floor and assist staff as needed during busy periods.
Ensure compliance with core liquor, beer and wine lists.
Plan and implement beverage menus.
Be involved in and/or conduct departmental and hotel training (CARE, One to One), etc.
Design, create and manage beverage programming and implementation for hotel F & B outlets, Catering menus and events
Collaborate with culinary team to build seasonal crafted beverage menus and wine list to be paired with food menus.
Establish relationships with wine and liquor representatives, wholesalers and ambassadors throughout the Kingston area
Responsible for purchasing wine, beer, spirits, non-alcoholic beverages and associated bar supplies inclusive of garnish and glassware through careful vetting of vendors and products
Maintain a financially sound beverage cost through careful budgeting and implementation of cost control systems and training
Conduct and ensure daily, weekly and Monthly beverage inventory while maintaining clean, organized and properly stocked storage areas
Design, create and manage a monthly and on boarding training program where staff is trained on wine, spirits, beer, beverage menus, trends and general beverage knowledge and service
Maintain and observe physical condition of facilities and equipment in the outlets and make recommendations for corrections and improvements as needed.
Ensure compliance with all laws, legal codes, government regulations regarding the food service industry, local liquor laws, health and safety standards
Create standard SOPs for opening, on-going, and closing Bar Side work.
Interview, select, train, evaluate, lead, motivate, coach, and discipline all employees and supervisors.
Required experience:
Must possess strong beer, wine and spirits knowledge.
Proven track record of success developing beverage menus and crafted cocktails for high-end clientele and luxury venues.
3 + years of progressive experience of inventory and cost control
Educated in current beverage trends and local spirits
this position least 1 year of progressive experience in a hotel or a related field.
High school diploma required.
College course work in related field helpful.
Previous supervisory responsibility required.
Must have knowledge of F&B preparation techniques, health department rules and regulations, liquor laws and regulations.

Must be able to understand and evaluate complex information, data, etc. from various sources to meet appropriate objectives.
Must be able to maintain confidentiality of information.
Perform other duties as requested by management.
