Context and background

Many Chefs have the ability to create great food to the delight of patrons and diners. However, in addition to creating culinary delights and great food, some Chefs have the passion and drive to excel while providing leadership and guidance in a commercial setting. The Head Chef’s influence will extend to creating interesting and exciting recipes and menus, hiring and guiding great staff, and maintaining exemplary quality standards.

Job Summary

The Head Chef will lead a team of bakers, chefs, and food preparation specialists in creating and presenting high quality gourmet baked products and food products. He/she will manage and supervise a full food production unit inclusive of a Deli, Bakery and Kitchen. Purchasing, inventory management, and staff training and development are part of the responsibilities of this role. 

Responsibilities Summary

  • Design menus and develop recipes.
  • Develop and implement cost saving initiatives.
  • Train staff inclusive of kitchen, bakery, and food preparation specialists.
  • Ensure staff are trained in best practice and the correct use of equipment.
  • Ensure compliance with local and international food sanitation regulations and food safety standards.
  • Monitor and manage food quality and food preparation compliant with world-class standards.
  • Manage inventory levels to ensure an adequate supply of key ingredients.
  • Create strategic and operational goals consistent with company goals and objectives.
  • Oversee equipment maintenance and operations.
  • Maintain aesthetically pleasing food displays.
  • Any other related duties as agreed with the senior management team.

 Requirements

  • A degree in Culinary science or a certificate in cuisine from an accredited institution
  • A minimum of three years’ experience in a managerial or supervisory position in a high-volume kitchen
  • Working experience in a commercial kitchen
  • Experience managing teams
  • Passionate about quality and service
  • Well versed in modern culinary trends and modern kitchen set up and operations
  • Proven leadership skills
  • Excellent oral and written communication skills
